Vieux Carré

Named in honour of that great classic among cocktails, and echoing the French Quarter of New Orleans, Vieux Carré is the “speakeasy” style bar steps from Place Royale in Old Quebec. Filling a need in the neighbourhood, it offers a hushed, intimate setting with a sweeping view over Place de Paris and the St. Lawrence River. Here the bar and the table meet in a refined, relaxed world where exceptional cocktails and inventive cooking come together to create unique, festive moments.

Our list highlights reimagined classics with a contemporary twist: plates made for sharing, local products given their due, and pairings designed to accompany our mixology creations. Every cocktail tells a story, between timeless traditions and modern boldness, built by a team passionate about the art of the bar.

More than just a bar, Vieux Carré is a place of gathering, discovery and celebration. In an elegant, convivial atmosphere, we invite you to spend a moment where creativity and the art of hosting intertwine seamlessly.

At the source

We dreamed of a bar where every cocktail would be built only from local spirits reflecting the flavours of the terroir. From the still to our counter, we work with artisans from here to create inventive cocktails that will surprise you.

Environment

The bar sits steps from the St. Lawrence River. We cherish that contact with nature, which reminds us of its essential role in our craft. That closeness inspires us to take concrete action to reduce our environmental footprint every day.

“ Here, for the space of a moment, you forget hostile lands, hardship and epidemics. Only one rule holds sway: to fraternize, to feast, and to warm heart and soul so as to forget the rigours of winter and the worries of survival. Cheers! ”

— Jacques Boisdon, Quebec City’s 1st innkeeper (1648)

“ As a resident of the neighbourhood since I arrived in Quebec City, I wanted to create a place and an offering that I felt was missing nearby. A gathering spot where you can stretch out the evening, enjoy the view and, above all, eat and drink well until late. With professional, convivial service and real cocktail expertise. Vieux Carré is meant to be the place I want to go when I finish work, when I have a day off, or when I feel like sipping a good cocktail and thinking. ”

— Philippe Veilleux,  restaurant manager at Vieux Carré

“ We were absolutely charmed by the place. The character, the atmosphere, the service — it is all there. Our server, David, was a real gem. Attentive and a good listener, he built cocktails to suit our tastes. A genuine favourite. They carry a very wide range of products, all from Quebec. We will definitely be back. ”
